The combination of our terroir, the know-how and technological skills give the wine “Les Demoiselles de Pallus” a characteristic depth of flavour.
The winery and the vats
Our wines are produced using traditional methods respecting both the vines and the soil. Source of our real wealth and a wealth we aim to enhance so as to offer a uniquely gourmet experience to our customers.
Considerable renovation has been carried out upgrading the safety standards in the winery: all of our stainless steel vats are linked to an automated thermo-regulation system in order to obtain consistent fermentation and optimum wine quality.
Our wines are aged in stainless steel vats and in our 400 liter oak barrel s which are new or only used once for one wine. This blend of vats and new or “one wine” barrels, is different every year and is allowing us to produce a very specific wine with excellent cellaring potential.
We cultivate our vines, vinify and age our wine and bottle and market our own production. The quality of our work, the respect of our “terroir” and the local environment are regulated by the Charter of Independent Winegrowers.
Maintenance and care of the vines
The use of new natural agricultural means and practices with sustainable vine cultivation preserve not only the environment but also the quality of the wine and safeguard the health of everyone concerned. The land was left uncultivated for three years before being replanted which guarantees a perfectly balanced soil composition.
We are continuously replanting all the vines which were damaged or missing in order to ensure continuous quality improvement. Today the domain is more than 85% old vines.
